Blueberry Pancakes

  • 1 Scoop Optimal Solutions® Vanilla Complete Protein & Vitamin Shake Mix
  • 2 Egg Whites
  • 1/4 Cup Oats (grinded into flour)
  • 1/2 cup non-fat Greek yogurt
  • 1 TB Unsweetened Vanilla Almond Milk
  • 1/2 Cup Blueberries
  • 1/8 teaspoon of Baking Powder


  1. Blend oats in a blender or magic bullet
  2. Combine dry ingredients (protein powder, oat flour, baking powder, and Stevia)
  3. Add wet ingredients and mix well
  4. Lastly, add the blueberries to the batter
  5. Pre-heat griddle/pan and spray with non-stick oil
  6. Slowly spoon or ladle batter into pan
  7. Cook until edges start to brown
  8. Flip pancakes and cook all the way through
  9. Add desired toppings, and enjoy!
