Blueberry Pancakes

Ingredients:
- 1 Scoop Optimal Solutions® Vanilla Complete Protein & Vitamin Shake Mix
- 2 Egg Whites
- 1/4 Cup Oats (grinded into flour)
- 1/2 cup non-fat Greek yogurt
- 1 TB Unsweetened Vanilla Almond Milk
- 1/2 Cup Blueberries
- 1/8 teaspoon of Baking Powder
Directions:
- Blend oats in a blender or magic bullet
- Combine dry ingredients (protein powder, oat flour, baking powder, and Stevia)
- Add wet ingredients and mix well
- Lastly, add the blueberries to the batter
- Pre-heat griddle/pan and spray with non-stick oil
- Slowly spoon or ladle batter into pan
- Cook until edges start to brown
- Flip pancakes and cook all the way through
- Add desired toppings, and enjoy!
